Soil types
morainic alluvial with a medium formation period, deep; the texture is sandy loam, with morainic stones frequent or very frequent.

Harvest date
mid-August is characterized by the manual harvesting of Chardonnay intended to become Franciacorta.

Vinification
gentle pressing using a pneumatic bladder press. Only the free-run must will be used for the vintage. The use of bâtonnage enhances the characteristics of the vintage.

Second fermetation
the Chardonnay selected for the vintage ages on the lees for a minimum of 60 months up to 85 months, a period during which we believe the yeasts express their best qualities.

Disgorgement
once fresh and floral notes are achieved, the Franciacorta is disgorged and presented as Extra Brut with a residual sugar content of around 1.5–2.5 g/l. This is followed by a final refinement in the cellar before release.
